Beer Mac N Cheese



50g butter

2/3 garlic cloves finely chopped or grated

50g spinach leaves

500ml milk

250ml pale ale

220g macaroni

100g grated cheddar cheese

200g grated mozzarella



You make the majority of this under the grill. Get yourself a flameproof casserole dish and pop in the butter.  Put this under the grill and once melted add the chopped/grated garlic.  Cook for about 2 mins.  Keep an eye on it and stir when needed to stop burning.  Then add your spinach leaves and cook until they wilt. 

Next pour in the beer and the milk and bring to a gentle bubble (yes still under the grill).  TIP: place your dish on to a tray and make sure you move this liquid slowly so not to spill.  

Now add the macaroni.  Stir this every few minutes until the macaroni has cooked and is all covered in the sauce.

Take out from under the grill and stir in ALL the cheddar cheese and HLAF of the mozzarella.  Then once all melted sprinkle the rest of the mozzarella over the top and put in the oven for approx. 10 mins on gas mark 5.  IT is ready when all the cheese on top is lovely and brown on top.
